“His Majesty the Coffee” is a specialty micro-roastery established in 2013 Italy, quality and innovation-oriented, one of the first Italian roastery dealing only with speciality coffee.

HMC is dedicated to high quality single origin coffees as well as flavorsome blend created with some of the finest beans the World has to offer.

Our specialty coffees are outsourced worldwide from the best coffee producing nations, roasted to highlight the amazing notes in every bean.

We are on the constant search for higher and higher quality standard along the entire coffee chain, from seed to cup.

The founder Paolo Scimone has a complex personality, his mind is always oriented toward innovation and is soul is rooted in Italian soil with all it’s creativity and tradition. With his staff every week he dedicates time to research and development.

The passion for England and the Royal family is already evident from its name but under the surface, a pure Italian heart beats in its chest. This duality is well represented also in HMC house blends: Londinium and Modoetia.

COFFEE BEANS COLD ROOM

HMC roastery is equipped with a cold room to properly store the green beans, keeping a constant temperature at 12° C. The humidity rate between 50% and 60% ensures the coffee stay always fresh and keep the right moisture until is going to be roasted.

To preserve roast green beans in the best condition, we store them in a separate room from the green ones. The temperature is 20° C, so coffees are less subject to thermal shock, in particular during summertime.

QUALITY CONTROL

Our team is obsessed with quality and want to taste every single coffee shipped from our roastery.

We therefore sample and cup every batch after roasting to make sure it is in line with our highest quality standard.

PAOLO

FOUNDER, CEO & HEAD ROASTER

Paolo is younger than you think, after a strong adolescent infatuation for coffee, he only got to know it deeply when he moved to London in 2005 working as a barista. From 2007 to 2009 he took over a coffee shop in Monza and later he worked 3 years for a roaster based in Varese and finally in 2013 he gave birth to His Majesty the Coffee.

Along the years he found time to study and obtain certifications like Arabica and Robusta QGrader.

Apart from roasting his own coffee, he is often travelling around the world to train a new generation of roasters, all fans of pizza and fish and chips.

BARBARA

ADMINISTRATION, BACK OFFICE & MARKETING MANAGER

Barbara is an eclectic person (how can she bear Paolo otherwise?!) with a solid background in food and beverage industry. She took her degree in Italian and Latin Literature, but her true love was her Master at University of Gastronomic Science. She is a gastronome, converted to coffee.

She is a food and beverage expert, worked in R&D and communication in a roastery and in an artisan distillery.

DOMENICO

ROASTER, PRODUCTION MANAGER AND LOGISTIC

Here is Domenico, he is natural blond, eclectic and passionate about coffee.

Domenico started his career very young in agriculture, after this experience he entered the metal-mechanical industry as a machine operator first and later as a quality checker. Over the past few years, under Paolo’s influence, he discovered the world of specialty coffee and got so much passionate about it that he decided to be part of it.

Giesen W15, born in 2017 in Ulft in The Netherlands, as a newborn she moved to the merry old Brianza and got engaged in HMC team, It was love at first sight.

She does not like being touched by strangers and she got upset when she found out that she was not powered by a windmill, Paolo tried to explain that now she lives in Monza, but she was very unreasonable.

ROASTING MACHINE & QUEEN OF THE LONGOBARD EMPIRE OF COFFEE

HB M6 born in 2017 in China from a Chinese father and Italian mother

She thinks we are still living in the Longobard empire and she insists on making a triumphal horse ride inside Parco di Monza every Sunday.

– In his opinion roasting coffee on an electric machine is like going to Oktoberfest and bring a six pack of Moretti Italian beer, simply unacceptable!

– He makes jokes of everything except about coffee quality.

– He would cheat on his partner only for Queen Elizabeth II.

– Piedmontese by birth and in the soul, recently adopted by Bergamo.

– Once a year, at least, she has to go to the Langhe & Roero and fall in love again.

– Naturally blond and smart…what’s your super power?

– She is aunt of 5 marvellous little brats.

– She is also a pastry chef: making a cake is giving an instant of happiness.

– She would like to have a donkey.

– She was a dancer and always will be.

DOMENICO

PRODUCTION AND LOGISTIC

Here is Domenico, he is natural blond, eclectic and passionate about coffee.

Domenico started his career very young in agriculture, after this experience he entered the metal-mechanical industry as a machine operator first and later as a quality checker. Much needed things to know about Domenico:

– He grows his own vegetable garden and he likes to cook what he cultivates.
– Give him some meat and he will grill it to perfection.

– He rejects cheese as food, nevertheless he accepted to work with Paolo, a renewed Gorgonzola cheese lover.

– After coffee, his favourite beverage is Corona beer, that he only drinks chilled with a lemon slice in it.

– He is often called Handy Mimmo, he is world champion of IKEA furniture assembly.

– He is tidy, accurate and he likes to clean up.

For all women out there, the only flaw he has is that he is happily married.

– She thinks we are still living in the Longobard empire and she insists on making a triumphal horse ride inside Parco di Monza every Sunday.
