This coffee comes from smallholder farmers associated with the Halo Beriti community and washing station, located in Gedeb.
High mountains in this region of Yirgacheffe are covered by green, luscious forests. Shade, and cooler air and other elements the nature of Yirgacheffe brings, help develop the aromas and exciting flavours in the coffee cherries.
The ripe cherries for this natural processed coffee are carefully hand sorted and floated to remove less dense coffee beans. Next the cherries are dried on raised beds for 15 to 20 days and turned regularly to avoid overfermentation and molds. Care and attention in the production process are very important to maintain the quality of these beans.
