The plantation is located in Panama’s cool, northern blue mountains in the small town of Boquete, in the Province of Chiriqui. At an altitude of over 1,300 mts, this beautiful region is blessed with light mist, rich volcanic black soil, fresh water springs and is surrounded by mountain forests. There are old Typica coffee plants on part of the finca that reach an extraordinary height of 12 ft high. The coffee trees are shade grown and have numerous banana, citrus and exotic fruit trees surrounding the farm.
Coffee plant exists in 124 species, of which only a handful are cultivated. From the original Arabica coffee plant, two varieties have developed through different crops: Typica and Bourbon. Typical plants produce around 20-30% less yield than the bourbon plant; this is probably one of the reasons why Typica coffee in its original form has received less attention and is only being rediscovered by global coffee producers today due to its high quality taste.
Typica has the lowest genetic diversity of all types of coffee. A Typica cup of coffee comes closest to the taste that filled the cups of the French royal court 300 years ago.
