La Coipa (San Ignacio)

This lot is a blend of daily lots sourced from producers in the La Coipa area of San Ignacio. Farmers harvest and process the coffee directly on their farms, with a fermentation period that typically ranges from 24 to 36 hours and drying on covered terraces. The main varieties are Caturra, Catuai, and Typica.

With the help of the Falcon Coffees Peru Foundation (FCP), established in 2019, we are able to work directly with farmers in the northern growing region, after observing that quality premiums were not reliably reaching producers. By purchasing parchment coffee directly from the farms, we ensure full financial traceability and pay quality-based prices that exceed local market rates.

Today, we operate two warehouses in the north (Jaén and Moyobamba) with a team of over 20 people who handle the sourcing and export of coffee from more than 500 farmers and eight cooperatives. The sustainability team organizes training courses for farmers and activities aimed at improving productivity, alongside our sourcing operations.

To source specialty coffee, they identify interested farmers by conducting digital baseline surveys (using an app developed by Copera), organizing workshops, and providing ongoing agronomic support. They are committed to purchasing from farmers in the program and paying premiums based on the quality of the cup.

When working with co-operatives, they do pre-harvest due diligence and cupping calibration, approve samples before delivery and about every 50 bags thereafter, directly monitor milling, analyze/cup processed-lot samples, and typically ship within five days of milling. Proximity to offices enables quick troubleshooting.

They also run multi-year projects: Falcon Specialty Plus (with responsability) to lift cup quality and premiums (average +1.32 score gain; peak 88; 107 producers enrolled), and a Soil Health Initiative targeting 600 farmers to improve soils, reduce chemical use, achieve GCP-equivalent certification, and generate farm-level carbon data.
