Manantiales is one of the first specialty coffee farms in the southern region, with more than 10 years with exotic varietals and different processing methods. In this farm, producers learn, experiment and try until the result where replicable to other farms. The knowledge is spreading to other farms and regions.
Main varietal is Castillo and Caturra, they also have Red and Yellow Bourbon, Gesha and Maragogype.
The coffee is picked at its optimal maturity moment (hand sorted) and then floated to remove the less dense coffee. After the coffee is floated it is de-pulped and placed in sealed containers for 24 hr under temperature and PH control When the fermentation is at its targeted point. The coffee is placed for 4 days to dry completely at controlled temperature with a peculiar drying procedure.
The drying process chosen is favorable to avoid over fermenting since the farm has continue high humidity and tends to have fog during the day. The coffee is dried until it reaches the ideal humidity.
